Stefano Corvucci, CEO of the Culinary Institute of Bologna will be your private chef and guide. He will take you on a journey to the places where the traditional Italian dishes were born. During this trip you and he will decide on the activities important to you.  The region is rich in food, historical and cultural sites to choose from. 


You'll learn about an unimaginable variety of seasonal local ingredients, and you will become an expert in their selection. He will entertain you by showing and explaining everything he learned during his gourmet life, revealing the treasures of his homeland and its gastronomic secrets. The adventure will transverse the regions of Emilia Romagna, Tuscany and Marche.



What you can expect from your experience:

Bologna

You will begin your culinary adventure in Bologna, where you will visit the local markets to gain an understanding of the local cuisine.  You'll then go to the Culinary Institute of Bologna and engage in personal, hands-on cooking classes of the best Italian dishes, according to the season. Discover the regional cured meats and cheeses, local seafood, fresh vegetables and, of course, our famous handmade pastas.

While staying in Bologna, a charming and ancient city, many fabulous culinary and cultural activities are available. Located in the heart of Emilia-Romagna, the bread basket of Italy, you can:

Visit the famous food factories that produce Parmigiano- Reggiano and Prosciutto;
Take a cooking class at a family-owned Balsamic Vinegar factory;
Visit a local winery;
Take a day trip to the San Lorenzo Market in Florence;
Explore neighboring villages like Modena and Ferrara.

The Apennine Mountains

After your stay in Bologna you will head to a quaint village in the beautiful Apennine mountains.  This retreat allows you to:
Take personal cooking lessons at Stefano's mountain retreat in the Apennines, including a 200-year-old stone oven;
Hike and picnic in the woods; 
Visit local farmers and food producers;
Visit dozens of welcoming towns and villages where art mixes with food, natural beauty and tradition:
The Sanctuary of La Verna (Tuscany) founded by St. Francis of Assisi;
The Borgo San Sepolcro (Tuscany), home of the painter Piero della Francesca, and the local museum with frescoes of the Resurrection of Christ and the Polyptych of the Misericordia;
Monterchi (Tuscany) where you will admire Piero della Franceasca's Madonna del Parto;
Places like Sant'Agata Feltria, Pennabilli and Monte Fumaiolo.
Stop to see the ancient city of  Ravenna on the way back to your departure spot.
