This 3 or 5 or 7 Nights package is focused on learning how to cook the great regional dishes of central Italy. This is not simply a "class" but more a chance to immerse yourself into the culinary secrets of
Pellegrino Artusi. The father of modern-day Italian cuisine, Artusi travelled throughout Italy and collected the regional recipes we now enjoy today.
You'll work side by side with the Chef in the kitchen of the house where you will stay. The focus is on technique rather than recipe. Whether you are a novice or a professional, this program is designed to enhance your skills.
The
retreat was once part of a convent and built in the 19th century. It has 2 fireplaces and a stone oven. The kitchen leads out to a garden with the Tevere River (which is a humble brook) on its border.
You'll have the entire house to yourself and your party.
Every morning you and the Chef will visit different local markets and determine the cooking program based on your interests and the seasonality of ingredients.
